The research interest of Dr. Carlos Oliveira focuses on several microbiological aspects of milk and milk products, including detection, molecular identification and prevention of pathogenic microorganisms, development of probiotics products and the effects of microbial and cellular counts in milk on the overall quality of dairy products. Studies on toxins produced by molds (mycotoxins) and their residues in dairy products are also conducted, as well as the risk assessment of the mycotoxin exposure in the human diet.
