The founder, Dr. Young W. Park is professor of Food Science at the Georgia Small Ruminant Research & Extension Center, Fort Valley State University, Fort Valley, Georgia (USA), and an Adjunct Professor emeritus at the Department of Food Science & Technology, University of Georgia, Athens, Georgia (USA), and currently an Adjunct Professor at the Mongolia International University and Mongolia Huree University, Ulaanbaatar, Mongolia. Previously, he served as Associate Professor and Research Scientist at the International Dairy Goat Research Center, Texas A&M University System, Prairie View A&M University, Prairie View, Texas (USA) during 1982-1997. His research has been centered on dairy goat products development and their quality evaluation studies for the past 33 years. Recently, Dr. Park published six well known books that have drawn worldwide attention to dairy scientists, food scientists, nutritionists, allergy specialists, health professionals and consumers. His first book released in 2006 entitled, “Handbook of Milk of Non-Bovine Mammals” has been translated into Spanish and Chinese editions. His third book, “Bioactive Components in Milk and Dairy Products“ published in 2009 also has been in high demand around the world, and currently being translated into Chinese. Dr. Park’s 6th book, “Milk and Dairy Products in Human Nutrition” has been published in 2013. Furthermore, he has published the most downloaded article in Small Ruminant Research Journal since 2007. Dr. Park has more than 300 publications including 6 books, 32 book chapters, 75 refereed journal articles, 180 abstracts, approximately 30 invited papers in national and international symposia and conferences. Dr. Park has been nominated to the 2000 outstanding scientists of the 21st century three times by the International Biographic Centre, Cambridge, England, since 2000.

Michael k Holland is Professor (Level E)-Professor of Animal Biotechnology and Reproduction and Director of Research Strategy and Development, School of Veterinary Science, University of Queensland and Visiting Scientist, CSIRO Livestock Industries.I currently hold a joint appointment in the School of Veterinary Sciences at the University of Queensland, where I am Professor of Animal Biotechnology and Reproduction and Director of Research Strategy and Development, and CSIRO Livestock Industries where I lead the Breed Engineering project in the Food Futures Flagship in CSIRO Livestock Industries.Within the University I am developing two major related research programs. The first of these builds on the work developed at Monash University within the ARC Centre of Excellence in Biotechnology and Development in which I remain a CI. These studies involve the isolation, characterization, culture and genetic manipulation of adult bovine testicular stem cells.

My interests grow out of a long term interest in male reproduction,fertilization and pre-implantation embryo development. More recently this has moved towards stem cells particularly their applications in livestock and in small animal veterinary medicine. My current funded projects include: A proteomic mapping of the bovine sperm surface (recently published in Proteomics) and identification of surface markers associated with several traits including fertility, sex determination and cryopreservation success Isolation of bovine spermatogonial stem cells and understanding the major factors which limit successful transplantation from Bos Taurus into Bos indicus recipients who’s own germ cells had been ablated by radiation of chemical treatment. Identifying bovine sperm proteins, other than PLC zeta, or micro RNAs which influence preimplantation embryo development. Isolation and characterisation of embryonic stem cell and induced pluripotent cells from livestock, dogs and wild felids and their use in assisted reproduction Identifying the major reasons for early stage pregnancy loss in Brahmin cattle raised in tropical Northern Australia Development of a contraceptive vaccine based on zona pellucida proteins for use in cattle to replace surgical speying.

Dr. VICKROY research interests are neuropharmacology, pharmacokinetics and regulation of drugs that are used in major and minor food animal species. At present, I serve as one of the national directors for the Food
Animal Residue Avoidance and Detection (FARAD) program, which is designed to prevent or mitigate chemical residues in animal‐derived foods (meat, milk, eggs, etc.) by therapeutic treatments (e.g., extra‐label
drug use) or accidental exposures to pesticides, toxins or other environmental contaminants. In addition, I serve as Southern Region
Drug Coordinator for the Minor‐Use Animal Drug program (MUADP). This program works with industrial partners and stakeholder groups to identify drug needs for minor food‐animal species (sheep, goats, gamebirds, aquaculture, etc.) or minor use drugs in major species. MUADP coordinators conduct or oversee suitable trials to generate and disseminate data that demonstrate safety and efficacy in target animal species as well as human food safety and work with groups within the Food and Drug Administration Center for Veterinary Medicine (FDA/CVM) to gain regulatory approvals for drugs.

Carlos Augusto Fernandes de Oliveira graduated in Veterinary Medicine in 1983, and received his Masters (1991) and PhD (1994) in Public Health at the University of São Paulo (USP). Since 2009, he is Full Professor at the Department of Food Engineering, School of Animal Science and Food Engineering of USP. Dr. Carlos Oliveira was the Head of Department of Food Engineering (2007-2011), and currently he is the head of the research working group registered at the National Council for Research Development (CNPq/Brazil) in the area of Milk Quality and Mycotoxins in Food Products. He has published 113 articles in referred journals, 12 chapters of book and presented 117 papers at conferences.

The research interest of Dr. Carlos Oliveira focuses on several microbiological aspects of milk and milk products, including detection, molecular identification and prevention of pathogenic microorganisms, development of probiotics products and the effects of microbial and cellular counts in milk on the overall quality of dairy products. Studies on toxins produced by molds (mycotoxins) and their residues in dairy products are also conducted, as well as the risk assessment of the mycotoxin exposure in the human diet.

He earned his DVM degree and graduated with Honors from the National Autonomous University of Mexico. He obtained a MVSc degree in Clinical Pharmacology (with First Class Honors) and a PhD in Veterinary Sciences from Massey University, New Zealand. He gained postdoctoral experience in the area of neurosciences at the Research Institute, The Hospital for Sick Children, Toronto Canada. His main area of research is on the pharmacology of pain and ways in which pain could be managed more effectively in large animals.

My research focuses on the pharmacology of pain. I am particularly interested in investigating therapeutic options that could be used to control pain in large domestic animal species. Large animals, and food-producing animals in particular, have received very little attention when it comes to assessing and treating pain. Therefore, work carried out in this area can have very important clinical implications, which ultimately may improve the welfare of these animals. To date, I have worked with classic analgesic drugs such as opioids, α2 agonists, non-steroidal anti-inflammatory drugs, local anesthetics, and N-methyl-D-aspartate receptor antagonists. Also, I am interested in finding synergistic analgesic combinations that could be used to treat pain more effectively at the same time that reduce the likelihood of inducing adverse effects and having drug residues.

Mr. Fatih Ortakci is a PhD student carrying a 4.00 GPA in the Department of Nutrition and Food Sciences at Utah State University, Logan. Received his B.S. and M.S degree from Ataturk University where he worked as a graduate research assistant for 3 years. After completing M.S degree at Ataturk University Mr. Ortakci decided that it is time for a change of scenery (and weather) and moved to snowy Logan, where he was accepted as a PhD student at Utah State University. He is a member of American Society for Microbiology and American Dairy Science Association. He frequently was asked to review manuscripts regarding microencapsulation of probiotics from several academic journals. Currently working on a project that causes slit defects in aged Cheddar cheeses by adventitious non‐starter lactic acid bacteria. Planning to graduate by the end of 2014 and continue to serve in the academics area. He currently resides in Logan with his wife Nermin and their son Kayra.

Makoto Senoo was appointed Assistant Professor of Developmental Biology at the University of Pennsylvania School of Veterinary Medicine in 2007, after completing postdoctoral research in the Department of Cell Biology at Harvard Medical School. Biography :

He born and grew up in a dairy farm in the middle of the Alp in north Italy. Every summer since he was 5 years old (and until 19 years old) he spent his summer pasturing cows, milking cows by hand, and producing Fontina cheese. At the Università Cattolica del Sacro Cuore in Piacenza (Italy), while he was graduating in Animal Science start his love for science that brought him to start a PhD in the same university. In 2004 he got the Italian doctorate (recognized as equivalent to a PhD) in physiopathology in dairy cows. In 2005 he moved at the Pennsylvania State University for one year post-doctorate with Prof. Gabriella A Varga where he initiated his studies on peroxisome proliferator-activated receptor (PPAR) in dairy cows. In 2006 he moved at the University of Illinois for a post-doctorate in livestock functional nutriphysiogenomics with Prof. Juan J Loor and, in 2009 at the same institution, he started a post-doctorate investigating use of mesenchymal stem cells for maxillofacial bone regeneration with Prof. Matthew B. Wheeler. At University of Illinois he taught courses in stem cell biology and lectured in several other topics, including metabolism and anatomy. His expertise range from agricultural to biomedical science and from in vivo studies with large animals to in vitro studies using tissue and cell culture in combination with molecular biology techniques. He has an extensive interest in studying PPAR in dairy cows with the purpose to fine-tune the metabolism in order to prevent metabolic-related problems. He has large experience in functional analysis of microarray data using system biology approach. In this regard, he developed a novel tool for analysis of large transcriptomics and proteomics dataset from time course experiments denominated Dynamic Impact Approach. From November 2012 he is an Assistant Professor in Animal Science at the Oregon State University. His main research interests are nutrigenomics in ruminants cells, animal welfare, and nutrigenomics of stem cells for tissue regeneration.

With a background in mathematics, statistics, and genetics, I develop computational tools and statistical methods, and apply them to large-scale genetic/genomic studies, while bridging statistical genetics, population genetics, and empirical biological studies for better understanding the genetic basis of complex diseases and traits.

Researcher at the Department of Chemistry, University of Bari, Italy. She is qualified as a PhD in Microbiology, Health and Food Chemistry achieved at the University of Bari with a thesis entitled "Mass Spectrometric Techniques for Lipid Analysis in Food." She graduated in Chemistry at the University of Bari March 28, 2003 with a thesis entitled "Development and characterization of bioactive polymer films on TiO2 substrates". The principal activities are focused on the development of new sensitive, reproducible, rapid, simple and low cost sample pre-treatment techniques coupled off-line to MALDI mass spectrometry for the analysis of different samples. During my research experience I have worked with MALDI mass spectrometry for: (a) determination of lipids, peptides and proteins in food matrices that allow a quick and reliable fraud detection; (b) characterization of organic binders in work of arts; (c) studies of lipid and protein profiles in bacteria grown under normal or stressed conditions in order to correlate the lipidome/proteome changes to a specific response mechanism. I have recently started to deal with synthesis, characterization and application of new MALDI matrices based on ionic liquids, modified strong bases and newly developed matrices derived from matrices conventionally used in MALDI mass spectrometry. Her research activity is documented by 40 publications in international peer reviewed scientific journals and 60 presentations at national/international meetings.

Raghavendra Bhatta completed his B. V. Sc in 1988 and M. V. Sc. (1990) and Ph.D. (1998) in Animal Nutrition from the University of Agricultural Sciences (UAS), Bangalore. He was awarded University Gold Medals both in masters and doctorate programme and was recipient of Indian Council of Agricultural Research Jr. Res. Fellowship and Council of Scientific and Industrial Research Sr. Res. Fellowships. He commenced his professional career as Technical Manager with Mysore Feeds Limited, Bangalore wherein he got acquainted with animal feed industry. He joined the Agricultural Research Services of ICAR in 1993 as Scientist at Central Sheep and Wool Research Institute, Avikanagar, Rajasthan. He has worked extensively on the nutrition of grazing sheep and goat and top feeds of semi-arid region containing plant secondary metabolites in the feeding of small ruminants at CSWRI. Since, 2003 he is working at the National Institute of Animal Nutrition and Physiology (NIANP), Bangalore. Dr. Bhatta was awarded the prestigious Japan Society for the Promotion of Science (JSPS) post doctoral fellowship (2004-2006) for the study on ‘Estimation and regulation of methane emission from ruminants’ at the National Institute of Livestock and Grassland Science, Japan. He has also completed 3-months International Training Programme of National Agricultural Innovation Project (NAIP) in the area of ‘Mitigation strategies for methane production from livestock’ at the United States Department of Agriculture (USDA) Laboratory at Texas, USA in 2011. In 2006, he has chaired the technical session at ‘International symposium on recent advances in ruminant nutrition’ at the XII AAAP conference at Busan, South Korea. He was invited to present a theme paper at the Greenhouse Gases and Animal Agriculture (GGAA) Conference at Banff, Canada in 2010, sponsored by the Japan International Research Centre for Agricultural Sciences (JIRCAS), Japan.
